Easy and uses common ingredients. Yields 28 cups.
Ingredients
Brown together in large stock pot (drain if necessary):
- 1# hamburger (or can add 2 c. cooked beef roast or stew meat with veggies)
- 2 medium onions, diced
- ½ c. water
Add and simmer 10 minutes:
- 3 cans (14.5 oz.) diced tomatoes
- 6 c. water
- 3 ½ c. carrots, diced 1/4" thick (about 5 medium)
- 3 envelopes onion soup mix
- 3 bay leaves
- 1 T. basil
- 1 T. salt
- 2 tsp. sugar
- 1 tsp. garlic powder
Add and simmer 10 minutes more:
- 4 c. potatoes, diced 1/2" thick (about 3 large or 4 medium)
- 2 c. celery, diced
Add and simmer about 1 hour to combine flavors:
- 1 bag (16 oz.) frozen corn
- 1 bag (16 oz.) frozen green beans
- 2 bags (16 oz. each) frozen mixed vegetables
Instructions
Soup can be transferred to a crock pot to finish cooking or to keep warm. Barley would be a good addition--increase water. Great with homemade bread! Enjoy!!
