This is a great basic vanilla cake.
- 10 tbsp unsalted butter, softened
- 2 c cake or all-purpose flour
- 1 ¼ c sugar
- 4 eggs
- 1 tsp vanilla extra
- ¼ tsp almond extract
- 2 ½ tsp baking powder
- ½ tsp salt
- ¾ c milk
Preheat oven to 350 deg F
Butter/grease and flour 2 9-in cake pans
Cream together the butter until smooth. Than gradually add the sugar. Beat until light (about 3 min).
Beat in the eggs, one at a time. Than the vanilla and almond extract.
Combine the flour, baking powder, and salt in a separate bowl.
Alternate adding the flour mix and the milk to the egg mix. Add slowly. Stir until smooth.
Put batter in the pans.
Bake for 25 min, or until a toothpick comes out clean. (If doing cupcakes, cook for 20 to 25 min).
Cool on rack for 5 min. Than turn over and completely cool.
I usually icing the cakes, but they are good enough to eat without iceing.
