Hershey's "Perfectly Chocolate" Chocolate Cake

Our top pick for birthday cakes around here! Beautifully dense and chocolatey when made with freshly ground wheat flour.

Ingredients

  • 2 c. sugar or sucanat
  • 1 3/4 c. flour (can be freshly ground wheat)
  • 3/4 c. baking cocoa
  • 1 1/2 t. baking powder
  • 1 1/2 t. baking soda
  • 1 t. salt
  • 2 eggs
  • 1 c. milk
  • 1/2 c. oil or butter
  • 2 t. vanilla extract
  • 1 c. boiling water or coffee

Instructions

  1. Heat oven to 350. Grease and flour pans.

  2. Beat together eggs, milk, oil and vanilla.

  3. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in separate bowl (or sift together directly into egg mixture.)

  4. Beat on medium speed 2 minutes.

  5. Stir in boiling water (batter will be thin).

  6. Bake:

  7. 2- 9" pans 30-35 min.

  8. 9x13 pan 35-40 min.

  9. 3- 8" pans 30-35 min.

  10. 12 c. bundt pan 50-55 min.

  11. cupcakes - line with papers and fill 2/3 full (about 30) 22-25 min.
