- 1 1/4 c. lukewarm water
- 2 t. salt
- 3 c. fresh ground wheat flour
- 2 1/2 t. yeast
Combine ingredients and let set 20 minutes
Knead until smooth.
Let rise. (optional)
Divide dough into 6 balls and knead each until smooth and round.
Flatten each with a rolling pin until about ¼ " thick.
Preheat oven to 500.
Cover and let rise 30-45 minutes. (optional)
Arrange upside down on greased cookie sheet (works best if not an airbake pan).
Set pan on bottom of oven or as close to burner as possible for 3 minutes. (the fast heating here makes them puff up better).
Move to higher rack and bake an additional 3 minutes.
