This is a family favorite that we started doing around Christmas time and became an "anytime" treat!
Ingredients
- 3 eggs
- 1 c. white sugar
- 2/3 c. canned pumpkin
- 2 tsp. cinnamon
- 1 tsp. baking powder
- ¾ c. flour
- 1 ½ tsp. salt
- ¼ tsp. allspice
- ½ tsp. nutmeg
- ⅛ tsp. cloves
Instructions
Grease jelly roll pan REALLY GOOD! Mix above ingredients together. Pour batter onto pan and shake gently to spread to sides. Bake 12-15 minutes at 350. Take out and cool about 2 minutes. Spread out smooth tea towel and sprinkle with powdered sugar. Loosen pumpkin roll with spatula or knife. Flip over onto towel. Let sit 5 minutes to cool. Roll up with towel in it.
Cream thoroughly:
8 oz. cream cheese, softened
1 c. powdered sugar
4 Tb. butter
1 tsp. vanilla
Open roll and spread filling evenly with rubber spatula or spoon. Roll back up and put on plastic wrap and wrap tightly. Refrigerate. To freeze double wrap with foil.
