This is not a true cobbler --it's almost pudding-like-- but super yummy and easy. The variations on this are endless. It also allows for substitutions-- whole wheat or sprouted flour and Sucanat work great and make for a more healthy version. You might want to double or quintuple this recipe-- it goes fast!
Ingredients
- ½ c melted butter
- 1 c milk
- ¾ - 1 1/4 cup sugar (depending on preferred sweetness)
- ½ tsp vanilla extract
- 1 c flour
- 1 ¼ tsp baking powder
- ¼ tsp salt
- 2 c fresh or frozen berries or stone fruit.
Instructions
Heat oven to 350 and grease a shallow, 2 qt. baking dish. Whisk together all ingredients except the fruit. Pour the batter into the prepared pan. Spread the fruit evenly over the top of the batter-- the fruit will sink in as it bakes. Bake for 1 hour. Try not to burn your mouth when you can't stand to let it cool before you taste.
