Cranberry Scones

  • 1 ¾ c. flour (+extra T. if needed)
  • ¼ c. sugar (+ extra for topping)
  • 2 tsp. baking powder
  • ¼ tsp salt
  • 1 c. dried cranberries or blueberries or currants or mini-chocolate chips w/ crushed peppermint candy
  • 1 c. heavy cream

  1. Preheat oven to 425 degrees F. Mix dry ingredients together and stir in cranberries or other dried fruit. Add whipping cream, stirring just until a soft dough forms. If dough is too wet, add extra flour, one T. at a time.

  2. On a floured surface, gently, knead dough 5 or 6 times. Place on greased cookie sheet and pat into a 8" circle. Score into 8 wedges and gently separate. Sprinkle tops with sugar.

  3. Bake 15-20 minutes or until golden brown. Serve warm with cream and/or jam! Enjoy!
