Crustless Quiche

  • 10 eggs
  • 1 c slightly steamed broccoli
  • 1 small roma tomato
  • 3 large button mushrooms, sliced
  • ½ onion
  • 3 (or more) slices of bacon
  • ¾ c of shredded cheese
  • ½ tsp of salt and pepper
  • 1 tbsp of your favorite steak seasoning - I've always used McCormick's Montreal Steak Seasoning, but recently was introduced to a new one by Fiesta Brand "Uncle Chris' Steak Seasoning. Trust me on the steak seasoning - it's been my secret *egg* ingredient for...

  1. Cook bacon (I only had three pieces left, but next time I'll use more) and keep a little of the bacon grease to saute your chopped onion.

  2. Chop onion.

  3. Scramble eggs in a large bowl. (My favorite vintage Pyrex bowl!)

  4. Saute onion in a tablespoon or so of bacon grease until brown and carmelized. (I hate raw onion, but love it this way.) Pretend I took a picture of this, but instead I had a blond moment and forgot.

  5. Combine broccoli, chopped tomato, sliced mushrooms, shredded cheese, onion, bacon, and steak seasoning with the eggs.

  6. Preheat oven to 350 degrees.

  7. Pour into a very lightly greased (with bacon grease of course!) deep dish pie plate.

  8. Bake in oven for 37-40 minutes. Center should be set. Slice into 6 pieces and serve!

  9. Enjoy! This broccoli quiche recipe (crustless quiche recipe) makes a fast breakfast reheated later in the week!
