Frioles Charros

Mexican cowboy bean soup.

Ingredients

  • 1 lbs pinto beans
  • 1 ½ tbsp minced garlic
  • 2 ½ tsp dried oregano
  • 3 serrano chiles, minced
  • 3 ¼ c diced tomato
  • 3 ¼ c diced white onion
  • 9 ½ oz bacon, chopped
  • 1/2 package hot dogs, halved and sliced
  • 1 ½ c chopped cilantro
  • 2 teaspoons salt or to taste

Instructions

  1. Soak beans overnight in water. In the morning, drain beans. Add water to beans in pot to cover by a few inches, then add garlic, oregano and serranos and salt and let simmer over medium-low heat for 6 hours; add water if needed. Add tomato, onion, bacon, hot dogs and cilantro; simmer an additional 2 hours, adding water if needed.
