Mexican cowboy bean soup.
Ingredients
- 1 lbs pinto beans
- 1 ½ tbsp minced garlic
- 2 ½ tsp dried oregano
- 3 serrano chiles, minced
- 3 ¼ c diced tomato
- 3 ¼ c diced white onion
- 9 ½ oz bacon, chopped
- 1/2 package hot dogs, halved and sliced
- 1 ½ c chopped cilantro
- 2 teaspoons salt or to taste
Instructions
Soak beans overnight in water. In the morning, drain beans. Add water to beans in pot to cover by a few inches, then add garlic, oregano and serranos and salt and let simmer over medium-low heat for 6 hours; add water if needed. Add tomato, onion, bacon, hot dogs and cilantro; simmer an additional 2 hours, adding water if needed.
