Frioles Charros
Mexican cowboy bean soup.
1 lbs pinto beans
1 1/2 tbsp minced garlic
2 1/2 tsp dried oregano
3 serrano chiles, minced
3 1/4 c diced tomato
3 1/4 c diced white onion
9 1/2 oz bacon, chopped
1/2 package hot dogs, halved and sliced
1 1/2 c chopped cilantro
2 teaspoons salt or to taste
1. Soak beans overnight in water. In the morning, drain beans. Add water to beans in pot to cover by a few inches, then add garlic, oregano and serranos and salt and let simmer over medium-low heat for 6 hours; add water if needed. Add tomato, onion, bacon, hot dogs and cilantro; simmer an additional 2 hours, adding water if needed.
