Pita Bread


  • 1 1/4 c. lukewarm water
  • 2 t. salt
  • 3 c. fresh ground wheat flour
  • 2 1/2 t. yeast


  1. Combine ingredients and let set 20 minutes

  2. Knead until smooth.

  3. Let rise. (optional)

  4. Divide dough into 6 balls and knead each until smooth and round.

  5. Flatten each with a rolling pin until about ¼ " thick.

  6. Preheat oven to 500.

  7. Cover and let rise 30-45 minutes. (optional)

  8. Arrange upside down on greased cookie sheet (works best if not an airbake pan).

  9. Set pan on bottom of oven or as close to burner as possible for 3 minutes. (the fast heating here makes them puff up better).

  10. Move to higher rack and bake an additional 3 minutes.
