Pumpkin Pudding

Ingredients

  • 2 c pumpkin puree
  • ¾ c brown sugar
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ t. ginger OR
  • 1 t. fresh grated ginger
  • ½ t. salt
  • 3 eggs, slightly beaten
  • 1 c heavy cream
  • ¾ c milk

Instructions

  1. Blend all ingredients

  2. Pour into a buttered 1 ½ quart casserole.

  3. Bake at 350 for 55 to 65 minutes or until a knife inserted near enter comes out clean.

  4. Cool and garnish with whipped cream.
