Soaked Flour Bread

Soaking the flour in raw apple cider vinegar helps make the wheat more easily digestible so this is great for people who have a slight wheat intolerance. Does not have a "sour" flavor when finished!

Ingredients

Mix together until dough forms a ball:

  • 2 c. warm water
  • 2 tbsp raw apple cider vinegar
  • 5-6 c. whole grain flour (wheat, spelt, kamut, etc. or combination)

After dough has soured, mix together:

  • 1/3 c. warm water
  • 1 beaten egg
  • 1/2 t. baking soda
  • 1/3 c. melted butter
  • 1/3 c. honey
  • 2 t. salt
  • 1/8 t. ascorbic acid powder (optional)
  • 1/2 c. flour mixed with 1 T. instant yeast

Instructions

  1. Cover first mixture and let sit 12-24 hours.

  2. Combine soured mixture and yeast mixture - dough should be sticky.

  3. Begin adding more flour and kneading - dough should remain slightly soft at end of kneading.

  4. Place dough into oiled bowl, turn to coat, let rise 2 hours.

  5. Punch down and let rise again until double (second rising is faster than first)

  6. Knead briefly and shape into three loaves. Place in buttered pans.

  7. Let rise until double - do not over-rise.

  8. Preheat oven to 450. Bake 10 min. Reduce heat to 350 and bake additional 20-30 min.

  9. Immediately turn loaves onto cooling rack.

  10. Enjoy with lots of butter!
