Quinoa With Corn And Black Beans

Something I threw together the other night that was really good.


  • 1 c of Quinoa
  • 1 c of frozen corn
  • 1 yellow onion
  • 1 can of black beans
  • 2 c of water
  • 1 c grated cheese
  • 7 oz. firm tofu


  1. Bring 2 cups of water to a boil in a medium saucepan and cook the quinoa for 10-15 minutes until all or most of the water is absorbed.

  2. Dice the onion and Sauté in a little olive oil in a frying pan until lightly browned.

  3. Dice the tufu into cubes and add corn and black beans to frying pan and cook for 5 minutes.

  4. Mix the contents of the frying pan into the saucepan.

  5. Add the cheese and stir the contents until mixed in.
