Something I threw together the other night that was really good.
- 1 c of Quinoa
- 1 c of frozen corn
- 1 yellow onion
- 1 can of black beans
- 2 c of water
- 1 c grated cheese
- 7 oz. firm tofu
Bring 2 cups of water to a boil in a medium saucepan and cook the quinoa for 10-15 minutes until all or most of the water is absorbed.
Dice the onion and Sauté in a little olive oil in a frying pan until lightly browned.
Dice the tufu into cubes and add corn and black beans to frying pan and cook for 5 minutes.
Mix the contents of the frying pan into the saucepan.
Add the cheese and stir the contents until mixed in.
