I know this goes against the spirit of the site, but this recipe need not be forked because it is perfect ;)
Ingredients
Filling:
- 1 red bell pepper
- 1 medium sized yellow onion
- 2 cloves of garlic
- 3 cans vegetarian refried beans
- 4 stalks of celery
- 2 tbsp tomato paste
- 1 tsp salt
- 1 tbsp water
- 1 tsp chili powder
- 1 tsp garlic powder
- ½ tsp lime juice
- 1 c frozen corn
- 2 tbsp olive oil
- 1 c cheddar cheese
- ¾ c of monterey jack cheese
Crust:
- 2 ½ c cold water
- 1 ½ c corn meal
- 1 tsp salt
- 1 tsp chili powder
Instructions
Preheat oven to 350° F.
Filling:
Sauté chopped onions and minced garlic cloves in olive oil until lightly browned.
Mix in refried beans, tomato paste, and water and cook for a 3-5 minutes until everything is consistently mixed together and heated.
Mix in chopped celery, minced red bell peppers, and frozen corn.
Crust:
Mix water, corn meal, salt, and chili powder in a saucepan and bring to a boil, immediately reduce heat to low and stir continuously until mixture is thickened.
Grease a 9 x 13 glass baking dish.
Place the corn meal mixture in the baking dish and spread evenly on the bottom and sides.
Assembly:
Place filling into baking dish and spread evenly.
Mix and sprinkle shredded cheese atop the filling.
Bake:
Heat the oven to 350 F.
Cook for 20 minutes until cheese is melted and crust is golden brown on the top.
