A yummy alternative to regular lasagna — seasonal, vegetarian and vegan. It's very hearty and works really well as a reheated lunch.

brown rice syrup, agave nectar, peanut butter, semi-sweet chocolate chips (vegan, if desired), 3-1/2 cups crispy brown rice cereal (I use Arrowhead Mills)
Rice Krispie treats without white sugar or butter, made in no time at all.

Penne With Potatoes And Asparagus
olive oil, large onion (2 to 2-1/2 cups), small waxy potatoes, cut in thick slices, then cut in half (4 cups), salt, Several sprigs of fresh thyme (optional), penne pasta, asparagus, cut into 1- to 2-inch pieces, Several splashes balsamic vinegar, Freshly ground black pepper, fresh basil leaves, cut into thin ribbons, Freshly grated Parmesan cheese (optional)
Sooooo yummy in spring, especially on those cooler days. Vegan if you omit the Parmesan.
